Peppers Please

So, peppers (red, yellow, green, orange) may not be new to you, but they are to me.  

About 2 months ago I discovered the deliciousness that is Bell Peppers. I think my favorite are the yellow and orange, but I do love them all. 

They are also packed with nutrients like Vitamin C, E, & B6.
They are low calorie--I don't count calories, but that's great news for those of you that do.

So I wanted to share my Stuffed Bell Pepper Dinner with you!  

It was really simple and super yummy! 

Grab some boneless, skinless chicken breast ( or tenderloins) 
Your favorite Bell Peppers--I used a green and an orange
A bit of onion 
Some rice 
& Tomato Soup Or Chicken Broth

*The amount of each ingredients depends on how many people/days you are cooking for.  I am cooking for only myself for today.* 

Cook your chicken first.  Be sure to season it well because nothing else inside of your pepper will actually be seasoned. [ I cooked mine in olive oil on top of the stove, you can also bake it instead]

After you cook your chicken throw some diced onions in the same pan that you cooked the chicken in because there will be some yummy juices and a bit of olive oil left.  Let your onions caramelize for a bit.  It shouldn't take longer than 2 mins since the pan is still hot and the onions are tiny.

Your rice should be cooking during this time as well.

Once everything is done, mix your rice, chicken and onions in a bowl..mix it well so that you have onion and chicken in every bite!

I cut just the very tops of my peppers off, took the seeds out rinsed them well and boiled them for about 3 minutes.  Let them dry while you pre-heat the oven at 400 degrees. 

Stuff your peppers with your chicken/rice mix and you can either actually make the can of tomato soup, or just pour it on top as a topping like I did.  It is also a good idea to use chicken broth instead of the tomato soup if you're not into that.  If you don't have any, bake your chicken and use the juice that it creates in the oven.  Pour this over and place it in the over for 10-12 minutes.

*If you don't like tomato soup OR chicken broth, choose something else just be sure not to put it in the oven without anything or you run the risk of all the filling drying out*
